Ingredients 455g/1lb peppered or plain ready-to-eat smoked mackerel fillets, fresh or defrosted, skinned and chopped roughly 55g/2oz cooked pasta shapes, drained 1 large pink grapefruit, peeled and segmented 1 x 100g/3½oz pack prepared salad leaves
For the herb dressing 4 tbsp olive oil 2 tbsp clear honey 1 tbsp cider vinegar 2 spring onions, finely chopped 2 tbsp fresh chives, chopped salt
Method 1. Place the dressing ingredients into a screw-topped jar and shake well. 2. In a large bowl add the fish, pasta, grapefruit and salad leaves. Pour over the dressing and mix well. 3. Transfer to a serving dish and chill
